Cheesy Chicken Sliders So Good You'll Want To Eat Five

I was trying to come up with an appetizer to serve for an upcoming girls' night I was having when the idea for these cheesy chicken sliders came to me!

I love this recipe because it has all the elements of a yummy, gooey, spinach dip but in a handheld form!

I was having some friends over to watch the Academy Awards. Definitely something the guys weren't into which meant I only had to consider the ladies when coming up with the plan for food and drinks. (I'll make the guys their beer bacon cheese dip another time!)

This recipe for cheesy chicken sliders was the perfect plan. I decided to put a spin on the crowd-favorite spinach dip with this recipe. I liked that it had chicken which was a great bridge for not having a full dinner, and it was served on a Hawaiian roll for easy eating.

There are few things I love to indulge in more than a great, creamy spinach dip. Melty cheese is always a winner (am I right?). I used King's Hawaiian Honey Wheat Dinner Rolls, to create a slider that incorporated all the great, gooey elements of a warm spinach dip and added some chicken to round out the dish and give it a bit more substance.

I also dressed up the wooden knives I used as skewers (this keeps the slider in tact) with gold stripes washi tape. It took me 2 minutes but really added a party flair to the appetizers.

Serve them with a mini glass of champagne or an easy cocktail. This makes tray passing both the sliders and the drinks a breeze!

Cheesy Chicken Sliders

These creamy, cheesy sliders are like your favorite spinach dip but in hand-held form!

Ingredients

  • 12 King's Hawaiian Honey Wheat Dinner Rolls
  • 12 Grilled Chicken Breast Strips
  • 2 Cups Baby Spinach
  • ¾ Brick of Cream Cheese
  • 1 Cup Shredded Monterey Jack Cheese
  • 1 Tbs Minced Garlic
  • 2 teaspoon Olive Oil
  • 1 Tbs Butter
  • Salt and Pepper

Instructions

  • Season chicken strips lightly with salt & pepper and grill them in a pan with butter, set aside
  • In same pan, add olive oil, garlic, and baby spinach and cook spinach down about 2 minutes
  • Add in cream cheese and shredded cheese and stir over medium heat until it is all one creamy, cheesy mixture
  • Split dinner rolls open and spread nice scoop of cheesy mixture inside
  • Top with chicken strip, skewer and serve immediately

Notes

These sliders are best served warm. If you want to make them ahead, leave them in the oven on warm for up to an hour before guests arrive.
Recipe substitutions: If you want to make these vegetarian, you can swap out the chicken for grilled, marinated artichoke hearts.
