Remember those cantaloupe + prosciutto appetizers I shared a couple of weeks ago? Well, I had some ingredients left over and sort of made this salad by accident. It’s full of flavor, really fresh, and so unique that it feels like a treat. Make it for yourself, or increase the ingredient portions and make a batch for a crowd. I think you'll impress your guests for sure!
I could eat like 10 servings of this. Considering that it's pretty healthy, I guess that wouldn't be such a bad thing (right?).
- Fresh basil leaves, torn into pieces
- Cantaloupe, cut into ½-inch cubes or balled with a melon baller
- Prosciutto, cut into ½-inch pieces
- Fresh Mozzarella balls, such as Bocconcini
- Prepare all ingredients and combine in a salad bowl. Refrigerate or serve immediately.
