The Perfect Weekend Breakfast Tacos

Confession: I'm a sucker for a great breakfast or brunch recipe. There's just something exciting about a dish you can eat in the morning that is unusual and delicious (no offense pancakes). These breakfast tacos are the perfect recipe if you're looking to spice up your weekend morning routine or want to have dinner for breakfast.

This time of year is more like "hibernation season" around this household. Our idea of a great weekend is starting off with a delicious meal and enjoying a family-themed movie marathon. I recently made a platter of these breakfast tacos and they were a huge hit!

Made with soy chorizo, eggs, cheddar cheese, cilantro, and RO*TEL –the recipe was really simple to whip up. We could all easily agree this recipe is a new favorite but we couldn't quite agree on the best show to watch over our brunch. With a big platter of these yummy tacos, we got cozy and decided on a movie marathon of Indiana Jones followed by my personal favorite, Friends.

Chorizo Breakfast Tacos

Ingredients
  • 1 Package Soy Chorizo
  • 8 Eggs
  • 1 Can RO*TEL
  • ¼ Cup Shredded Cheddar Cheese
  • 2 Tbs Cilantro, diced
Instructions
  1. Cook chorizo over medium heat. Once cooked and crumbled, pour in scrambled eggs and combine with the chorizo. Once mixture is done, assemble tacos. In a warmed flour tortilla, fill with egg mixture, cheese, cilantro and 1 TBS of RO*TEL. Serve immediately.

    Sounds very different.Never tried meat made with soy.
