What's bright, bold, and perfect to sip in the summer? This dragon fruit margarita recipe! I mean, look at that COLOR!
I love this summer cocktail because it's so dang pretty to look at. It reminds me of these bright layered vodka cocktails I made one summer. But, don't let the color fool you–it's not super sugary or sweet.
This dragon fruit tequila margarita is made using red dragon fruit. Did you know there are several types of dragon fruit? I had no idea! I had never actually purchased dragon fruit before, but I found these frozen cubes on frozen aisle one day when I was shopping for smoothie fixings and I was intrigued so I picked up a bag.

What is Dragon Fruit Anyway?
Dragon fruit is a tropical fruit that comes from a cactus. It's most prevalent in Mexico but it's grown all over the world. It's also commonly called pitaya or strawberry pear. But I personally think "dragon fruit" sounds way cooler!

Here's a look at all the ingredients you will need to make this bright pink cocktail.
I like to go ahead and pre-measure out all my ingredients before I start making my recipe. This is optional of course, you can measure and pour as you go along if you like that method better.
Add all of the ingredients (except the club soda) to a blender.
I recently bought this personal blender and I am addicted to it! I originally bought it to make smoothies. My kids always ask for smoothies but they seem to each want a different type. I found myself washing the big blender and this little one is just so easy to use and clean. Bonus, I can whip up single frozen cocktails in seconds!
Salt is optional but I love a salted rim. To salt the rim of your margarita glass simply rub a lime wedge on the rim and dip it into coarse salt.
Once you've blended your ingredients, pour the contents of the blender into your margarita glass or tumbler. Then, top it with club soda or sparkling water.
Give it a little stir and garnish with a lime wheel.
Now, enjoy your bright, summery, margarita. This drink would be perfect for a backyard dinner fiesta!
Frequently Asked Questions About This Recipe
I don't typically like blended drinks so I use the frozen dragon fruit cubes as the "ice." It blends up nice and cold with just the right amount of frostiness for me. If you like a thicker blended drink, you can add ice to your blender.
This recipe uses ready-to-eat frozen dragon fruit cubes because I like to keep things simple.
If you can't find those and want to use fresh dragon fruit instead, you will need to prepare your fruit properly. This typically means making a juice out if it (peeling, cubing, blending, and then straining).
Nope! I don't really care for sweet drinks. And, although this bright pink color looks like it should be really sweet, it's not. If you would prefer it sweeter, you could increase the amount of agave syrup you use.
