I'm pretty sure any dessert in "mini" form is a hit, but make it a mini ice cream cakes with cereal and you're going to be the hero of desert. Trust me.
I've made a few different fun dishes with cereal in the past (like these Lucky Charms cereal donuts, these Fruity Pebbles cereal rimmed glasses and these Froot Loop stir sticks), but this breakfast-cereal-turned-dessert recipe for has definitely jumped up to my #1 spot.
The good news is, it's really easy to make these mini ice cream cakes! You'll need 4" mini springform pans (I grabbed mine from Amazon), and just a few other ingredients.
Plus, you can customize these and use any fun breakfast cereal you'd like. My tip is to make a variety and share because they are ALL so good!
My family's favorite was actually the Lucky Charms ice cream cake which would be perfect to make as a Saint Patrick's Day dessert! Personally, I loved the Cinnamon Toast Crunch ice cream cake the best.
You need to plan a little ahead of time when making these mini ice cream cakes because they will need to harden in the freezer for at least 4 hours. I made them the afternoon before I wanted to serve them.

TIPS:
- You can make these using any flavor ice cream you'd like but I think using a vanilla bean ice cream really complimented each of the cereals I used.
- Grab the mini variety bags of cereals because one small bag is the perfect size for one of these mini ice cream cakes!
- You might want to reserve a little of each type of cereal to use a "topping" right before you place them in the freezer. This will give it a cute factor.
Mini Ice Cream Cakes with Cereal
Ingredients
- 4 Mini bags of your favorite breakfast cereal I used: Cinnamon Toast Crunch, Lucky Charms, Trix and Cocoa Puffs
- 1 Gallon Vanilla Bean Ice Cream Substitute with any flavor you like
- ¼ Cup Shortening Such as Crisco
- ½ Bag White Chocolate Chips
Instructions
- Place gallon of ice cream in the fridge so it softens. You do not want to melt it but you'll need it soft so you can stir it into the cereal
- Empty each individual bag of cereal into it's own small bow
- In a separate bowl, combine the shortening and white chocolate chips. Melt in the microwave for about one minute. Stir so that you have a nice melted white chocolate mixture
- Pour ½ of the chocolate mixture into each of the cereal bowl and then stir to mix white chocolate and coat the cereal
- Pour out each of the cereal mixtures into a pile on parchment paper and sort of flatten it out so it can harden slightly
- Once the cereal is slightly hardened, put each one back into it's bowl and add a ¼ of the carton of ice cream to each bowl
- Mix well so that the cereal is well combined throughout the ice cream
- Fill a 4" mini spring form pan with the ice cream and cereal mixture. Work fast so that your ice cream doesn't begin to melt and drip through the bottom of the pan
- Place each mini cake into the freezer for at least 4 hours to harden
- Once ready to serve, dip a butter knife into warm water and "cut" around the cake to release it from the side of the pan. Then, remove the springform pan and place the cake onto a plate
