In a small saucepan, heat 1 cup of water and 1 cup sugar until sugar is dissolved; Remove from heat
Toss is a healthy handful of cilantro (stems and all are fine). Let it steep until the syrup is completely cooled
Strain off cilantro leaves using a mesh strainer so all you have left behind is the infused syrup
To make the margarita
Rub a lime wedge around the rim of your glass and then dip it into sea salt (optional)
Add jalapeño slices and simple syrup to glass and muddle so the oils of the peppers are released
Add ice to glass
Add lime juice
Add tequila
Stir
Garnish with a sprig of fresh cilantro, a lime wheel, and a slice of jalapeño
Notes
You can make the cilantro simple syrup up tp a week before. Be sure to store it in the fridge.
If you're not a cilantro fan, simply omit it from the recipe and just use regular simple syrup, agave nectar, or even honey.
I like to add a splash of club soda to the top of my margarita. This is totally optional.
